Mexican Casserole
A Mexican dinner would be just right for a winter night meal.
Directions
Brown l/2 lb. ground beef, 1/4 cup chopped onion and 1/4 cup chopped green pepper. Drain.
Add: 1 pkg. chili mix, 1/2 cup cooked brown rice., 1 can whole kernel corn (drained), 1 can pinto beans (drained), 1 (14.5 oz.) can diced tomatoes and 1 can Ro-Tel.
Mix all ingredients. Pour in greased pan. Bake at 350 degrees for 45 minutes.
Optional: Remove from oven and sprinkle with cheddar cheese and crushed Doritoes and return to oven until cheese is melted. You can double all ingredients, except chili mix and Ro-Tel to fill a 9 x 13 pan.
