Twice-Baked Potatoes

This is a good dish to accompany other vegetables for a great meal.

Ingredients

7 Large Baking Potatoes

1/2 Cup (1 Stick) Butter of Margarine, softened

2 Cups (8 Ounces) Shredded Cheddar Cheese

2 Cups Sour Cream

2 Ounces Bacon Bits

10 Green Onions, Chopped

Salt and Pepper to taste

Paprika

Directions

Wrap the potatoes in foil. Bake at 375 degrees for 2 hours or until soft. Remove to a wire rack and let cool. Slice off the top one fourth of the potatoes lengthwise. Scoop out the potato pull into a bowl, keeping the shells intact. Mash the potatoes. Add the next 5 ingredients.

Season with salt and pepper. Mix until no lumps remain. Fill 6 of the potato shells with the potato mixture and discard the remaining shell. Sprinkle with paprika and place on a baking sheet. Bake at 350 degrees until heated through. Serves 6.
