Strawberry Pie

Springtime is here. Certain desserts go along with each season. One that comes to mind as the best for this season is delicious strawberry pie. It’s perfect for your Easter meal.


6 cups of sliced fresh strawberries

1 l/2 cups granulated sugar

¼ cup cornstarch

1 – 6 oz. box of strawberry jello

2 cups boiling water

1 teaspoon lemon juice

1 teaspoon vanilla


Stir together over medium heat sugar, cornstarch, gelatin, and boiling water. Continue whisking to prevent lumps. Keep boiling and continue stirring for a minute. Cool and add lemon juice and vanilla.

Rinse strawberries and place on paper towel to remove water. Cut the strawberries into slices. Place the berries into a large bowl.

Pour two thirds of the glaze over the strawberries and stir. Then pour the glazed berries into a baked and cooled 9 inch pie shell. Pour the remaining glaze over the pie. The pie should be placed in the refrigerator for as much as four hours before serving.
