Recipe of the Week- Coconut Cream Pie

This is such a delicious pie that is good anytime.

Ingredients

4 cups milk

2/3 cup cornstarch

1-1/2 cups sugar

4 egg yolks

1/2 stick butter

1 tsp. vanilla

2 cups frozen coconut

2 pie shells, baked

Directions

  In a saucepan, combine milk, sugar and cornstarch. Cook until hot and then remove from heat.

Beat the 4 egg yolks and add small amount of heated mixture. Pour the egg mixture back into the saucepan and return to heat and cook until thick (stirring constantly). Remove from heat and add coconut, butter and vanilla. Pour into the baked pie shells.

Meringue

Ingredients

4 egg whites

1 tsp. cream of tartar

1/2 cup sugar

1/4 cup coconut

   Beat egg whites with cream of tartar until soft peaks form. Add 1/2 cup sugar and beat until stiff peaks form.

  Spread on pies and sprinkle with coconut. Bake at 400 degrees until the meringue browns. This is really good when served hot.
