Coconut Pie
Christmas will soon be here. It is time to plan for the desserts that everyone enjoys so much.
Ingredients
3/4 CUP SUGAR
3 TBSP. CORNSTARCH
3 EGG YOLKS
2-1/2 CUPS MILK
1 TSP. VANILLA
1 CUP COCONUT
Directions
Mix all ingredients and cook over medium low heat until thick, stirring constantly. Pour into browned pie crust.
Make meringue by beating 4 egg whites with 1 tsp. cream of tartar and adding 1/2 cup sugar gradually. Beat until stiff peaks form. Sprinkle on some coconut and bake at 400 degrees until the meringue browns.
