Tennessee Apple Pie
Since apples are abundant in supermarkets now, an apple pie would be a delicious ending to a meal.
6 cups apples, peeled and sliced thin
2/3 cup sugar
1/4 cup brown sugar
1/2 cup orange juice or apple juice
1/4 tsp. nutmeg
1/4 tsp cinnamon
1 egg white, slightly beaten
2 tbsp. butter
pastry for a 2 crust pie
Put apples, sugar and juice in a pan. Add just enough water to barely cover. Cook until tender. Remove apples and boil syrup until slightly thickened.
Fit pastry in 9-inch pie pan. Brush with egg white. Add apple slices, nutmeg and cinnamon. Dot with butter. Place top crust and brush with egg white. Cook 35-40 minutes in 425 degree oven.
